Oolong Tea
Is one of the teas that takes the longest to create. It is designed according to the five basic stages, with the rolling and oxidation stages done repeatedly. Oolong is a complex category, because it's so vast: it's more simply described as halfway between green and black, which is exactly right. These teas are anywhere from 8% to 80% oxidized (roughly measured by looking at the amount of brown or red on the leaf as the tea is made). The leaves are rolled, then left to rest and oxidize for a while. Then they are rolled again, and oxidized, again and again. Often, gentle heat is applied to slow down the enzymes a little. Over many hours (sometimes days), a beautiful overlay or "painting" of aroma and flavor is created. Oolongs are generally much more complex in flavor than green or white teas, with their creaminess, gentle astringency and rich floral or fruity flavors. Because of their harmonious, rich-flavored profiles, Oolongs are ideal for those just starting to drink tea.
